Marco Kaasinen ja Jukka-Pekka Viita-aho

At Sabores Bistro, at the heart of cooking is, as the name suggests, taste.

Taste is the sun in our kitchen that illuminates our minds and warms our pots and cast iron pans. Four moons orbit our sun: Raw Material, Inspiration, Season and Organic. Raw material and inspiration are the initial explosion. Local producers and seasonal food are a continuum.

Our inspiration comes from the forests and lakes of Finland, the narrow alleys of Malaga's old town and the endless hustle and bustle of the market hall. They are an integral part of our identity. Like our staff, from Sodankylä to Malaga, Sabores Bistro is like a glowing baking oven that combines Scandinavia’s wild cliffs and pine forests with Andalucia’s colorful and warm rhythm of life.

We prepare our food handcrafted from start to finish, with love and according to the season. What’s in high season now can be found on our menu.

Marco hosts Club and Jude Bistro

'I've been manager or partner in several retail businesses related to meat and fish, selling or cooking. At one point I was also a bar entrepreneur. And finally ended up as a chef at Merimakasiini in Helsinki.

Jude (Jukka-Pekka) has more extensive list as being a chef: Restaurant Aito, Kalastajatorppa, Hotelli Torni, Hilton Strand and then couple of winters in Lapland at Hullu Poro.' Marco answered when I asked about their CV. Impressive names, as I know being from Finland.

'We want to offer both, excellent taste and beauty in our servings. Otherwise service is more easy going and relaxed. We want people to feel like home. It's OK to come to drink 'Finnish style' as well as to eat.

We have also started evening activities like Poker Night on Mondays. Some people play for money, bet is 10 cents.' Marco laughs.

'Sabores is fulfillment of two major dreams I've had for a long time. Living in Spain and own a (food) restaurant. Now I feel alive. I live my dream.'

This was Marco's interview at the beginning of Sabores Bistro. Now, 2022, six years later; Sabores family has grown, business ideas have changed and expanded. And today, as busy entrepreneurs, life feels even more like Life.
